Rules are not always followed. "That" always refers to something neutral, so it definitely cannot talk. "Ik werken" should be "ik werk" when the verb "werken" is conjugated in a proper way. This can be done for the sake of making the expression stronger. The word "maar" also helps for this purpose.
For syntax lovers: this style figure is called an "enallage".
